I’ve never heard of carrot pie. Numerous online searches for this confection + “Raleigh” yielded no results. Not that I was surprised. I’m guessing this is one of those creations born from the long-ago need to use what you had and make it work — and stretch to feed many mouths.
I easily found a recipe though so I whipped this up one day with some assistance from my junior baker. I did cheat on the pie crust, buying a premade one. (Gotta save my pie crust energy for Thanksgiving coming up soon.)
I had no idea what to expect, but with a half cup each of brown sugar and white sugar, I figured it couldn’t be terrible.
Turns out, carrot pie is delicious! We were all pleasantly surprised by how tasty this was. Think along the lines of pumpkin pie or sweet potato pie. Tastes like Fall in a pie! I highly recommend, and I may even add this to the Thanksgiving menu this year.
