Carrot granola bar is one of the odder options in the Lemon Cake game, at least in this humble cook’s opinion. Perhaps where the developers live, these are a common treat. More likely, they needed some ideas to use carrots in the game.
Either way, I always knew we’d be making this one at home.

I found a few recipes online so I selected one that seemed reasonable. What’s good about these is they are sweetened with applesauce and maple syrup — no sugar. Except the mini chocolate chips I added. 🙂
What’s not great is that I wasn’t impressed overall.
I don’t see myself making them again. If I did, I bake them a bit longer. These were chewy. I’d also cut the carrots more (I ran them through the food processor using the grater) and maybe saute them in butter the way I did for the carrot pie.
Rory and Leo liked them, but meh. Out of all the desserts in the world, or even the granola-type snacks, this one isn’t going to top my list.

Maybe I should have gone with a more cookie-like version with some frosting on top like the photo? 🙂
