#39 – Cherry Bundt Cake at Home

The challenge this time wasn’t tracking down the dessert — we knew we weren’t going to find it — but to find a bundt pan. My goal was not to buy one, but to borrow. After all, I don’t make many cakes, let alone bundt cakes.

Alas, my relative who had one had recently ditched hers. But she felt bad about it and ordered one, which arrived at my home two days later thanks to the incredible distribution that is Amazon. I guess I’ll have to make at least one more bundt cake in my life.

I found several recipes for cherry bundt cake with varying levels of difficulty. I wanted it to contain fresh cherries and have icing so that it would match the photo. I chose one that used both vanilla and almond flavoring.

I hear cakes sometimes don’t come out cleanly from the bundt pan, but this one did. I liberally sprayed the cooking spray, so that’s probably why! My icing was slightly too thick to drizzle properly, and I forgot to keep a few cherries back to decorate.

However, the cake turned out really well! Everyone loved it. I would make and eat this again.
